This is MY FtLB takes a look at the people who live and work on Fort Lauderdale Beach to learn what makes this little slice of paradise such a special place to live, play or stay.

We sat down with Brooke Mallory, Chef de Cuisine at Burlock Coast located within The Ritz-Carlton Fort Lauderdale to talk about some of her favorite things.

Brooke, first congratulations as the appointment as Chef de Cuisine at Burlock Coast. It will be a year in February 2020, what has been one of your favorite things about holding this position?
I have to say, it would be the ability to change our menu with what is available daily and locally. We have the ocean in our front yard and I love being able to utilize whatever amazing seafood I can from it.

Like most restaurants within hotels, Burlock Coast serves breakfast, lunch, and dinner daily, not to mention that fabulous grab and go marketplace. With so much variety, what are some of the most popular items on the menu?
For breakfast, hands down the Huevos Rancheros. It's a hearty dish, but not heavy and packed with protein, so its a great way to fuel up with for a day of beach activities, watersports or just exploring.  At lunch, the Southern Fried Chicken Sandwich is always a winner and for dinner, any of our fresh seafood, such as the tuna poke, barramundi or cobia

If you had to pick a favorite or a must-try dish or drink, what would it be? 
Definitely our Passionate Coco Cocktail and the Stonefruit Salad

You spend a good part of the day cooking for others. At the end of the day, where are some of the restaurants you like to go and have someone else cook for you?

One of the little lines we as locals often say is "I live, or in this case, work where you vacation.  What do you love about working on Fort Lauderdale Beach?
You never see the same sunrise or sunset twice.  The beauty alone makes working on the beach worth the traffic. But seriously you can’t beat it.  The vibe is great the people are wonderful, and we are accessible to everyone.

What tips would you offer those visiting the area, to help them get the most out of their Fort Lauderdale Beach visit, whether a day, weekend or longer?
Uber to the beach, plan to be here for a while there are a lot of things to do and explore.  Renting bikes is always good, you can go up and down the beach easily and efficiently. Always wear sunscreen!! Just because you think you won’t burn, you will.

The Ritz-Carlton brand has a reputation of its own, but what are some of the things you believe makes the Fort Lauderdale Beach property so unique?
Our location is at the very center of the barrier island and there is so much to do here without ever stepping outside. The restaurant (Burlock Coast) first and foremost appeals to everyone and we love having people come from the beach to dine with us. Our pool is gorgeous, and almost feels like an infinity pool the way it looks over the ocean, and if you head to the beach - we have service for our guests. There are also some unique ways to elevate your experiences, such as our private Rum Room dinners and our Wolrd-Class spa. For the ultimate stay, our presidential suite 1704,  has one of the best views of the ocean and our amazing pool deck.
